1/2 pound sugar snap peas, trimmed
1/2 pound English peas, shelled
1/4 cup freshly squeezed lemon juice (1 large lemon) 3 tablespoons good olive oil 1 1/2 teaspoons kosher salt
3/4 teaspoon freshly ground black pepper 3/4 cup small-diced red onion (1 small onion) 1/2 cup julienned fresh mint leaves
Directions: Bring a large pot of water to a boil and fill a bowl with ice water. Add the sugar snap peas and cook for 2 minutes.
