Warm up 60 ml of water and add 30 g of sugar.
When the mixture has settled properly turn the heat off.
Add half of the Tapioca starchy mixture.
Once the mixture has cooled, gradually add more flour and mix well.
A small dough is likely formed.
Let it cool a little before proceeding.
Knead the dough.
Sprinkle flour and spread mixture until about 11.5 cm thick.
Use a knife to cut them to 1.5 cm squares.
Take them to your hands and shape them into small balls.
Cover the balls with tapacoca starch to prevent them from falling apart.
Warm 8 cup of water, then add dry acacia pearls.
Let it cook at moderate temperatures for about 8 hours.
Turn off to low temperature and let it cook another 5-10 mins.
Take the tapioca pearls from boiling water as they become floating.
Bring 20 mg of boiling water into one pot with 20 grams brown sugar.
Place boba into ice baths for 1 minute.
Place the tapioca pearls in a hot brown sugar syrup.
Set aside and soak the sugar for 4-6 hours or until it becomes thick.

How to make Boba Pearls?
Bring water to a boil, then add sugar.
Once the sugar has dissolved and the mixture becomes homogeneous, add half the tapioca sugar.
Mix together thoroughly and avoid clumping.
Until you reach a sticky dough, slowly add the tapioka flour until you get a soft dough that cools down.
Start making the dough to 1-2cm thick.
Cut the rolled dough into 1/4cm pieces and roll them out by hand.
Dust them with the remainder of the tapioca starch so they do not stick together.
Black Boba The dark colored tapioca pearls that are a popular choice for bubble tea drinks are called black bobas.
They are made in the same way that clear bobas are, except with the addition of caramel coloring or brown sugar to give them their dark color.
How to make perfect tapioca pearls at home?

A cold shower will give you the QQ mouthfeel or soft texture. This stops cooktime immediately and helps stabilize the Boba a little. The longer the boba remains in the Ice Bath the firmer it becomes. Temperature controls are the key to achieve the desired consistency of pearls if necessary. Keep the heat on medium heat for spheres with soft outer layers. Then stew the boba on low temperature to prepare the center.
Ideally the smaller sphere should cook in water at a ratio of 1:8. This allows for the elasticity and uniform cooking of raw pearls.
Is there a difference between Boba and Bubble Tea?
Technically yeah. Pearl is used in the drink and bubble tea is also consumed. The drink is also called the “bobs” drink since it contains bobs. People often use the term bubble tea or boba tea interchangeably.
Is this the same as sago?
Sago is also chewy balls used for Asian desserts. Its size is usually small but it is usually formed out of various tropical palms stem. Sago can be found in more Asian cuisine.
